Roll It Right

Roll the dough from the center out, lifting the pin after each roll. This helps keep your touch tender, and gives it a nice, round shape. 

Glaze to Amaze

For an impressive, shiny finish, brush the top of a double-crust pie with a beaten egg or egg white mixed with a little water.  

Weigh It Down

Ceramic pie weights work best when weighing down a pie crust. No ceramic? No problem! Dried beans work great, too.
