STEP ONE HEAT oven to 400°F. Coat sweet potatoes with 1 tablespoon oil. Place on baking sheet. Combine carrots, parsnips, squash, shallots and 2 tablespoons oil in medium bowl. Place on separate baking sheet.
STEP TWO BAKE potatoes 50 to 60 minutes or until fork tender. Bake vegetables in same oven for 30 to 40 minutes or until fork tender.
STEP THREE CUT each potato in half. Top with vegetables and goat cheese.
